Apple Pudding Cake

 BEAT TOGETHER FOR 5 MINUTES:
1-3/4  cups sugar
  1/2  cup applesauce
     1  egg substitute  (1/4 cup)
     2  egg whites
ADD:
    2  tsp. soda
  1/2 tsp. nutmeg
    2  tsp. cinnamon
    1  tsp. vanilla
    2  cups flour
MIX THOUROUGHLY IN MIXER.  STIR IN BY HAND:
  1/2 cup chopped nuts
  3-4 chopped unpeeled apples*
Bake at 300 degrees in a 9" x 13" pan sprayed with vegetable spray for 1 hour and 15 minutes.
WHILE STILL WARM, CUT IN SERVING PIECES--AND POUR THE FOLLOWING SAUCE OVER IT:
     1 cup dark brown sugar
1-1/2 Tbsp. corn starch
     1 cup orange juice***
  1-2  tsp. dried orange peel
Boil together for a few minutes in microwave.  Save a little of the sauce to use
over cake when served. Serve with Cool Whip and top with sauce. NOTE: *Apples can be done in food processor.  ***When a recipe calls for orange juice I like to add a few spoonfuls of frozen concentrate juice.
