Good Luck Black-Eyed Pea Dip
Earmark this recipe for your next New year's bash...legend has it you're supposed to eat black-eyed peas on January 1 for good luck.
2 15 oz. cans black-eyed peas, rinsed and drained
1 4 oz. can jalepenos (or use the black-eyes peas with jalepenos already in them)
1 onion (small, medium or large) chopped up
1/2 cup non-fat sour cream
1 can Rotel tomatoes (choose mild, regular, or hot)
1 cup non-fat or low-fat shredded cheddar cheese (Healthy Choice is good)
Take the black-eyed peas and mash with a fork. Leave some of them whole. DO NOT USE A BLENDER. Add the rest of the ingredients and mix it all well. Spread into a 8'x8' baking dish and cook 30 minutes at 300 degrees. (This is really good served with wheat thins.)
