Oven Fried Green Tomatoes
Ingredients
1/2 cup cornmeal
1/4 tsp. pepper
2 egg whites
1 Tbsp. water
3 medium green tomatoes-cut into 1/4 inch slices
Cooking spray
Directions
Spray a nonstick baking pan with cooking spray (the olive oil flavored Pam is good for this one!). Combine cornmeal and pepper; set aside. Combine egg whites and water; beat well. Dip the tomatoes in egg mixture; dredge in cornmeal mixture. Place tomatoes in a single layer on baking pan. Bake @ 400F (make sure it is pre-heated and HOT when you put them in…keeps them from getting soggy). Bake for approximately 35 minutes or until browned; turn once at about the 15 min. mark. This is also a great way to fix oven fried squash. Try it with zucchini. For a different twist, instead of cutting across the zucchini; slice them lengthwise. Adjust the cooking time…takes a little less.
