Here is a great and easy way to fix Healthy Sweet Potatoes. Cut the unpeeled (be sure you scrub) sweet potato lengthwise. Spray with butter-like spray ( I use 'I can't Believe it's not Butter') and then sprinkle with 1 teaspoon of brown sugar (sometimes I use honey instead). Sprinkle with cinnamon or pumpkin pie spice. Put the two halves back together. Wrap in foil to cook in the oven. I put in the oven at 400F for an hour if I am cooking other things at that same time and temperature. Otherwise, I will wrap in Saran Wrap and cook in the microwave for approximately five or six minutes. Check your microwave because each one is different! Test for doneness when you can easily 'smush' the potato.
