Waldorf Carrot Salad
Ingredients
2 C peeled and shredded carrots
2 C unpeeled chopped tart apples (use Granny Smith if available)
1 C chopped celery
1/3 C chopped dates
1/3 C nonfat yogurt
1/4 cup mayonnaise-Fat Free! ( I like Kraft brand)
3 T orange juice
Directions
Combine the fruits and celery. Mix together the yogurt, mayo and orange juice. Pour over the carrot mixture, tossing gently. * You can also add raisins to this. Adds some calories but will also provide some other nutrients and adds to color and flavor. Makes 8 servings.
