Taboli

Ingredients

1 lb. Bag of taboli wheat
1/2 cup lemon juice (ReaLemon)
3 bunches green onions
1/2 cup extra dry Vermouth (or vegetable oil)
1/2-1  bunch fresh parsley (see note)
2 tsp.  pepper (Java black, crushed or salad grind pepper)
1 green pepper, chopped fine 
1 Tbsp.  light salt
2 fresh tomatoes, chopped
1 cucumber, chopped fine

Directions

Empty bag of wheat into pan and cover with cold water. Rinse. Drain and squeeze excess water from wheat. NOTE: Place about 1 cup of fresh parsley, less the larger stems in the blender. Cover with water and put on chop for only a few seconds. Drain water by pouring through a sieve or strainer. Mix chopped parsley immediately with rinsed wheat and stir thoroughly. Mix all vegetables. Then add lemon, oil, salt and pepper. Stir again and then refrigerate. Allow a few hours for the wheat to soften before serving. Will not keep longer than a week because the wheat becomes soggy with time.
