Berry Delicius Summer Silk
Ingredients
1 12-oz pkg of frozen mixed berries
1 Small pkg of fresh berries such as raspberries or blackberries
Few sprigs of mint
1 12-oz can frozen berry juice or juice concentrate (100% juice only)
2 envelopes Knox unflavored gelatin
8 oz plain, unsweetened, fat-free Yogurt (no aspartame!)
1 12 to 14-oz pkg of soft tofu,
( I prefer Mori-Nu Soft Silken Tofu, available at Billie's)
3 egg whites
2 Tbsp. sugar
1/8 tsp. salt
1/4 tsp. cream of tartar
1 tsp. water
Directions
Thaw the frozen berries, but not quite. Put a large glass mixing bowl and a fairly large serving bowl into the freezer. Put a small glass mixing bowl into the refrigerator. Soak the gelatin in 1/2 cup juice for 5 min,. Then heat until completely dissolved. Then cool. Meanwhile, put the yogurt in a blender. Drain and rinse the tofu and put in the blender with the yogurt. Add the juice from the frozen berries. Blend on low speed, adding the concentrated berry juice to taste. Now add and blend in the juice/gelatin mixture. Turn into the freezing mixing bowl and put into the refrigerator. Stir often, scraping down the sides with a spatula till it starts to set. When setting begins, make a meringue in the cool bowl from the refrigerator, like this:
Put the egg whites, salt and water into the bowl. Whip till frothy. Note: Using a wire whisk is best, as it incorporates more air; this takes awhile. An electric beater is OK, but use it on medium speed. Add the cream of tartar. Whip till until meringue begins to peak up and fall over gently. Whip in sugar, adding about 1/2 tsp. at a time rather quickly. Quit when peaks hold. Do NOT over-whip, as the liquid will fall out and the remainder will be dry.
When refrigerated mixture begins setting enough to be thick when stirred, gently fold in meringue with a spatula. Return to the refrigerator for about 20 more minutes. Then gently fold in the berries. Turn into the frozen serving bowl. Refrigerate. When firm, decorate with fresh berries and sprigs of mint.
