Salmon Souffle

Ingredients

1 Tbsp. Butter or margarine
1 Tbsp. Flour
1-1/2  cups liquid (milk plus juice from salmon)
1/4 tsp. Salt
1  egg separated
1 lg. can salmon drained and separated

Directions

Melt butter with flour. Add milk and salt. Cook till thickens, stirring constantly. Pour liquid slowly over well-beaten egg yolks. Add flaked salmon, fold in stiffly beaten egg whites. Pour into greased pie plate or dish. Bake at 350 degrees for 45 to 50 minutes.
