One Pan Potato Chicken Santa Fe
Ingredients
2 medium potatoes cut into 3/4 inch cubes
1 lb. Boneless, skinless chicken breasts, cut into 3/4 inch cubes
1 Tbsp. Olive oil-or canola oil
1 small can whole kernel corn- or 1 cup whole kernel frozen corn
1 cup prepared tomato salsa
Directions
Cook potatoes in the microwave for 8 to 10 minutes until tender. While potatoes cook, place chicken and olive/canola oil in large skillet on high heat and brown. Add the potatoes in skillet and lightly brown. Toss in corn and salsa until heated thoroughly. Cook time: 20 minutes. Serves 4.
