Barbequed Catfish

Ingredients

1 T. bar-b-que sauce
1/4  t. grated lemon zest
1/2  t. lemon juice
      dash cayenne pepper
1/2  lb. Catfish fillets

Directions

Preheat oven to 400F. Spray shallow baking dish with vegetable spray. In a small bowl, combine bar-b-que sauce, lemon zest, juice and pepper. Place fish in prepared baking dish and spoon sauce over fish. Bake at 400F for about 20 minutes or until fish is done-depending on thickness of fillet. Test it with a fork to see when fish flakes. Note: Remember to use just the colored part of a fruit or lemon when grating the zest. If you get into the white pith, the zest will be bitter. You can freeze the grated citrus zest so you have it conveniently on hand. Citrus zest is an excellent way to add some flavor and "zest" without adding fat! Many of us use fresh lemon juice in a glass of water or iced tea. Just grate the peel and freeze it for later use, prior to slicing or 'juicing' the fruit.

The easiest method to grate citrus zest is to buy a "zester" especially designed for this task. The Oxo "Big Grip" one is easy to use, especially if you have Arthritis in your hands. These can be bought at Dillards or Linens & Things.
