Orange-Raisin Cake
Ingredients
1/2 cup sugar
3/4 cup orange juice
1/2 cup ground orange rind
1/2 cup raisins (or part cran-raisins)
1-1/2 cup sugar
3 cups flour
3/4 cup applesauce
1 1/3 tsp. Soda
1 1/3 cup buttermilk
1/2 tsp. Vanilla
Substitute for 2 eggs
1 egg white
Directions
Cover 1/2 cup sugar with 3/4 cup orange juice and let stand to use over cake when it is removed from the oven. Grind orange rind and raisins together. Mix cake in order starting with sugar through vanilla.
After mixing ingredients of the cake, beat for five min. with electric mixer add the ground raisins and rind. Bake in sprayed 9"x13" baking dish at 350 for 45 min. or until center is done. Cut in pieces and pour orange syrup over hot cake.
