New York Cheesecake

Ingredients

1/2  cup crushed 3 Light Graham Crackers
5  pkgs. (8 oz. Each) PHILADELPHIA FREE FAT FREE cream cheese softened
1-1/2  cups sugar
Equivalent of 4 eggs---1cup EGG SUBSTITUTE
1 cup FAT FREE SOUR CREAM
1 Tbsp. Sugar

Directions

Spray bottom of 9"pan, then sprinkle heavily the Light Graham Cracker crumbs. Beat cream cheese until smooth (low to med. Speed). Add 1 1/2 cups sugar and vanilla with electric mixer on low to me. Speed until well blended. Add Substitute Eggs, at 1/4 cup at a time, mixing on low speed after each addition, "just until blended." DO NOT OVERBEAT AFTER ADDING EGGS. Pour over crust. Cover pan with aluminum foil. Bake at 325 degrees for one hour and 15 min. or until center is almost set (it does not take my oven that long—approx. one hour). Cool & refrigerate four hours or overnight. Stir by hand-sour cream and 2 Tbsp. Sugar. Spread over cheesecake. Garnish with fresh strawberries, or blueberries, or frozen. I use a pkg. of mixed frozen berries coated with ALL FRUIT blueberry jam—heat the jam and mix into fruit.
