Lemon Pecan Quiche

Ingredients

3 egg substitutes (1/4 cup each)
2 Tbsp. oleo (no fat, no hydrogenated oils… like Smart Balance)
1/4  cup skim milk
1-1/4  cups  sugar
1/2  cup no fat biscuit mix
   juice and pulp of lemon cut in pieces (no peel)
1 tsp. lemon extract
1/2 cup chopped pecans

Directions

Place all ingredients in blender and process till foamy and lemon is ground. Pour into 8” pie plate sprayed with PAM. Sprinkle pecans on top. Bake at 300 for about 1 hour or until set. May brown slightly. Serves 4.
