Fat Free Chocolate Sauce
1/2 cup unsweetened cocoa
1/2 cup packed dark brown sugar
1 Tbsp. cornstarch
1/2 cup 1% or skim milk
1/2 cup very strong coffee
1 tsp. vanilla
In a small saucepan, mix dry ingredients. Gradually stir in milk and coffee. Bring to a boil; boil, stirring constantly 1 minute. Stir in vanilla. Makes almost 2 cups.
Note: This is a rather thick sauce and I add extra liquid if necessary after cooking and stir it in. It keeps well in the refrigerator. I also use instant decaffeinated coffee: 2-3 heaping tsp. and add water for the strong coffee.
