Heavenly Pear Muffins

Ingredients

1-3/4  cups  all-purpose flour
2 cups peeled and cubed pears (2 medium)
1/3 cup sugar
1/2 cup skim milk
1 Tbsp. Baking powder
3 Tbsp. Oil (not olive oil)
1/4 tsp. Salt
1 egg beaten
1/4 tsp. Nutmeg

Topping:
1  Tbsp. Sugar
1  tsp. Finely grated lemon peel

Directions

Heat oven to 400'. Spray 12 muffin cups with nonstick cooking spray, or line with paper baking cups. Combine flour, 1/3 cup sugar, baking powder, salt, and nutmeg in a large bowl and mix well.

Add pears and toss to coat. Combine milk, oil and egg in small bowl and beat well. Add liquid ingredients to dry ingredients mixing only until moistened. Do not over-mix. Divid batter evenly among muffin cups. Combine topping ingredients well and sprinkle over batter in cups. Bake 15-20 minutes, or until a toothpick inserted in the center comes out clean and edges are light golden brown. Best served warm.
Yields 12 muffins.
