Grits Cheese Souffle
Ingredients
1 cup quick Grits
1 cup water
2-1/2 cups boiling water
1 egg beaten
1/2 cup applesauce
1 tsp. Garlic powder
3/4 lb. lower fat Velveeta cheese cut in chunks
Directions
Mix 1 cup cold water with grits. Mix into 2-1/2 cups boiling water. Cook grits until thick (about 5 minutes in microwave). Add eggs, applesauce, garlic and cheese. Stir to mix and melt cheese. Beat 3 egg whites and fold into the mixture. Bake in sprayed baking dish at 350F for 45 to 50 min. (Until knife comes out clean—set like a custard). May be frozen after baking.
