Coconut Date Nut Quick Bread
Ingredients
2 cups all-purpose flour
1/4 cup milk
2 tsp. Baking powder
2 tsp. Vanilla
1/2 tsp. Baking soda
1 cup chopped pitted dates
1/2 tsp. Salt
1/2 cup chopped walnuts or pecans
2 eggs
1/3 cup unsweetened flaked coconut
3/4 cup thawed frozen unsweetened apple juice concentrate
1/4 cup butter or margarine melted
Cream Cheese (optional)
Directions
Preheat oven to 350 F. Combine dry ingredients in medium bowl; set aside. Beat eggs in separate medium bowl. Blend in apple juice concentrate, butter, milk and vanilla. Add to dry ingredients. Mix just until moistened. Stir in dates, walnuts and coconut. Spread into greased 9 x 5-inch loaf pan. Bake 45 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan on wire rack. Remove from pan; cool completely. Slice and serve at room temperature, or toast slices and spread with cream cheese, if desired. Makes 12 servings.
